Pizza, probably the first thing you think about when talking of wood fire ovens, is not the only food you can cook in your new brick oven. Nothing gives meat, grilled or roasted, a better flavor than an authentic Mediterranean Oven. The aromas that you will achieve in all your dishes will dramatically enhance the way you cook, while providing you genuine enjoyment. A regular oven cannot compete with what can be done in a wood-burning brick oven. A pizza cooks in under 2 minutes right on the oven floor. The crust will be crisp on the bottom, and the toppings always come out beautifully blended and perfectly cooked. All of this helps to create a multitude of healthy dishes that will consequently improve your lifestyle.

Prosciutto e Rucola
Very easy but extremely tasty. The base is a pizza Margherita (tomato sauce and lots of mozzarella cheese) once the pizza is cooked and still nice and warm, place on top 3-4 thin slices of prosciutto (Italian cured ham) and a hand full of baby arugula. A touch of extra virgin olive oil will do the trick for this amazing pizza.

The Sun
I'm not expecting everybody to like this pizza, but if you are in the mood for something different and you want to experience the variety of ingredients you can put on top of a pizza this is definitely a winner. Just one spoon of tomato sauce will be enough for this creation. Cover the entire pizza with cheese (I prefer to use Fontina cheese or some other sharper cheese but mozzarella will do just fine). Just second before you slide your creation into the brick oven, crack open an egg in the center. Once it's cooked, in just about 2 min. lay 5-7 anchovies as they were the sun-ray. Let sit for one minute before eating so that the anchovies warm up. Enjoy.

Light tomato sauce, lots of cheese (preferably mozzarella but you can add multiple types if you want), artichoke hearts, mushrooms, sausage and salami.
